For the day/night settings you need to adjust the sliders for "Day Night Length" and "Day Light Length ".
Day Night Length = How many minutes in real time it takes for a full 24 hours to pass in the game.
Day Light Length = How many of those 24 hours are day time, with the remainder being night time.
For example,
Day Night Length = 60 (take 1 hour realtime for 24 hours in game)
Day Light Length = 18 (24-18=4 hours of night)
Night always starts at 22:00 (10pm) so the 4 hours of night will make the day time start at 4:00 (4am).
